Delta Decalactone is one of many lactones we use. It occurs in wine, tropical fruits, dairy products, coconut, and many other foods. This ingredient is very useful as a contributory ingredient in many flavors, as It provides body or a fullness character to any flavor.
It is not considered a characterizing chemical, because it does not have high intensity or flavor strength for a particular flavor. It can be used to support or contribute to selected profiles, like coconut, all dairy products including milk, butter, and cheese flavors.
