Sensory Evaluation of Ethyl-2-Methyl Pentanoate

Ethyl-2-methyl-pentanoate has a fruity red type flavor character. It is found in plums and other fruits. Taste this ingredient starting at the following PPM's: 0.1; 0.5; 1.0; 2.5; 5.0; 7.5; and 10. Use the same temperature water for the solutions, and taste the 0.1 PPM first, and then increasing PPM solutions. At each PPM use level, document your flavor description and intensity. Based on your sensory data, add the ingredient to the formula to get the desired result. To clean the palate between tastings, or after tasting a few different PPM solutins, you can eat grapes. Don't chew on the grape skins as they are bitter, and can leave a lingering taste in your mouth. Grapes will make you salivate and thereby cleaning you palate.
